These
are only part of the superb range of naturally smoked and
prepared fish products available exclusively from David Felce.
Coming from a family background in the restaurant and catering business,
and having worked in the wet fish business for twenty years, David now specialises in smoked fish. He developed his own preparation
methods and kiln, and now uses a simple but highly effective method to produce a
limited but mouth watering range of fish and fish products.
The fish are purchased from local suppliers who use only a natural rearing
environment, and organic feeding methods.

There are no computer controls, chemicals, hormones, additives or any other
substances which could detract from the natural flavour of the fish. |
| This is not the most economical way of smoking but it
does give a better flavour and texture than other methods. Our most popular
luxury product is 'Oak Roast Salmon'. This is organic salmon which has been
smoked and then baked in the kiln. We smoke Haddock and Cod, and make pate from
smoked Salmon, Mackerel and smoked roe. There is also a range of fishcakes. Salmon,
Cod and spicy Crab. |

Oak
Roast Salmon.
This
is one of our most popular products. Lightly salted, smoked and cooked over Oak wood. Made
from Salmon that has been reared at sea with a 5 or 6 knot current flowing
past the fish at all times. The fish are in clear clean water and do not need
the chemical input that fish farmed in sea lochs require. The flesh is also
firmer and less fatty, due to the fact that the fish swim and shoal in a natural
way.
